Ingredients
- 1 vanilla pod
- 2 ounces (55 milliliters) water
- 6 tablespoons sugar
- Grapefruit juice, reserved from grapefruit
- Small handful blueberries
- 4 strawberries, halved
- 2 yellow and red plums, stones removed and cut into 1/8ths
- Small handful raspberries
- 1/2 a pink grapefruit, segmented and juice reserved
- 1/2 orange, segmented
- 1/2 melon, cubed
- 1/4 bottle Prosecco wine, chilled
- Creme fraiche, for serving
Instructions
- Remove the vanilla seeds from the pod and put seeds and pod into a small pan. Add the water, sugar and reserved grapefruit juice. Bring to a boil, reduce heat and simmer to make a syrup. Put in the refrigerator until thoroughly chilled.
- Toss the prepared fruit in the chilled syrup. Spoon onto plates and pour over the chilled Prosecco. Serve with creme fraiche.

I made this for a party, and placed it among all the other desserts (i.e. chocolate cakes, cheesecakes, tarts, etc.) and it was the only one that was completely eaten by the end of the party! Fruit is always so refreshing, but adding the fresh vanilla flavor and the bubbly proseco just “kicks it up a notch”! Loved it!!

i was looking for a new/different fruit salad to bring to my book group and chose this recipe. putting it together was easy and the results were delicious. i had enough to bring to book group and have plenty of leftovers for my family the next night. (we are not big wine drinkers/ so i omitted the wine and it still was yummy.)
I’ve made this several times and it is excellent. I sometimes substitute different fruits depending on what is in season. Also, one time I used vanilla extract because I was out of vanilla bean and it was very good. Everyone I have made it for Loves it.
