Maracuya (Passion Fruit) Mousse

Ingredients

  1. 2 cups frozen passion fruit pulp, defrosted
  2. 4 cups heavy cream
  3. 1 (14-ounce) can sweetened condensed milk
  4. Mint sprigs, for garnish
  5. Biscotti or other crisp cookies, for garnish

Instructions

  1. Special Equipment: martini glasses
  2. Place 1 tablespoon of passion fruit pulp in the bottom of 8 martini glasses or ramekins, totaling in 1/2 cup passion fruit pulp, set them aside.
  3. Using an electric mixer beat the cream until it holds stiff peaks. Whisk 1 1/4 cups of passion fruit pulp with the condensed milk in a large bowl, add 1/4 of the whipped cream and whisk it in. Fold in the remaining whipped cream and fill martini glasses or ramekins with some mousse. Drizzle some of the remaining passion fruit pulp over the top. Serve immediately or cover flush with plastic wrap and refrigerate for up to 8 hours. Serve cold with a mint sprig and a biscotti.

I didn’t find any passion fruit in my area so I substituted it with strawberries. It came out better than I expected. I added some lemon zest as a garnish and my children and nephew’s thought I was amazing for making this dessert.

I am Brazilian and I know Brazilians like to take short cut to make this “mousse” thing. This is not a mousse, I would call “Cream” that you may use to dress other dessert, cake, or eat the way it is. If you have a descent mousse recipe you should try to use the concentrate passion fruit as the main flavor.

If you want to make this as a “CREAM” you should use TABLE CREAM (Nestle my preference), not heavy cream like in the recipe, otherwise I will have to agree with the single stars!

You can use concentrated juice instead of pulp. And people…if you don’t like her…why are you seeing her show, looking and doing her recipes? Very contradictory!!! I think you don’t know how to cook!!!

I tried many different stores in my area in search of passion fruit pulp. I couldn’t even find actual passion fruit. I saw passion fruit juice, but was afraid it would be way too runny. We do have several gourmet markets and organic markets in my area in a large city, so I was a little disappointed. I substituted fresh papaya and pureed it in my food processor. It is a little runny and is more like a nice topping than a mousse, but it tasted good.

I love this recipe and my family loves it too. Its fast and easy I just added slices of strawberries on top and it was great. I really like Ingrid’s show. It’s sad how people like to critize instead of rating the recipe. Anyone who had problems with this recipe must not know how to cook.
