Ingredients

  1. Deselect All
  2. 1 store-bought pound cake ring
  3. 1 (10-ounce) jar lemon curd
  4. 1 cup frozen whipped topping, thawed
  5. 1 (1-pound) box powdered sugar
  6. 1/2 cup lemonade frozen concentrate, thawed
  7. 1 tablespoon lemon flavored gelatin powder
  8. 1/4 cup frozen whipped topping, thawed

Instructions

  1. To make the cake, begin with a serrated knife and level the bigger end of the cake. This will be the bottom. Slice off top inch of cake. Carefully set aside (do not break). Scoop out a trench in the cake for the filling. Set aside.
  2. In a bowl, combine lemon curd and 1 cup of whipped topping. Stir gently to combine, being careful not to over-stir. Fill center of cake with filling and cover with the reserved top of the cake.
  3. To make the icing, place all icing ingredients in a bowl and stir to combine. Make sure that all lumps are dissolved. Drizzle icing over cake until completely covered in icing. Let set before serving.
  4. Cook’s Notes:
  5. Pound cake ring can be decorated with a beautiful nosegay of roses or other edible flowers placed in the center hole. Alternatively, you can buy frozen pound cake loaf and layer lemon cream mixture between slices. Top with more lemon cream and garnish with fresh berries.

Tasty? Yes. What did you think? I wasn’t the biggest “Lemon Lover.” But…you’ve changed that! I LOVE THIS! I made this cake because it looked appealing, and it was the perfect cake for my husband’s birthday. And he LOVE’S LEMON everything!!! It was soooo delicious that, it barely made it to the next day! I wrote this recipe down, but couldn’t remember what I wrote it on. I was hoping that you would’ve showed it again (because ALL my family loved it, but it just dawned on me to search it online, and…WALLAY! HERE IT WAS! Thankyou so much Sandra! p.s. We Luv your “Food, Drink’s, Decoration’s & Table Scape’s” as well. Keep up the good work! :^

Really tangy, sweet frosting. Mine was a bit heavy, so cut small slices. Gotta have a cup of coffee with it because the frosting is intense. Yummy.

I love!!! this cake, I make a lighter homemade version of pound cake, then also add shaved chocolate on top and pepper dust in the tunnel of filling for an added twist YUMMMMMMMMMM … THanks Sandra DELISH!!!

I have made this cake for the past 2 years at Easter and EVERYONE loves it! It is very lemony so if you are not fond of extreme lemon taste don’t try it! I love it!

The cake made as is in this recipe is a 3 (at best). It was the lemonade that I didn?t like the taste of. With a few tweaks and as a trifle it is a 5. Since this was the recipe that inspired the trifle, I give it 4 stars.

Tweak the filling as follows, 1 jar lemon curd, 2 heaping Tbps powdered lemon pudding & pie filling mix, 2 heaping Tbps powdered sugar, 1 12oz tub frozen whipped topping (thawed). Also, cut the pound cake in 2? cubes.

Mix all filling ingredients and layer, cake cubes / filling / cake cubes / filling.

If you like lemon cake, you?ll LOVE this!
