Lemon Cream Salad

Ingredients

  1. 10 ounces lemon-lime carbonated beverage
  2. 1 cup miniature marshmallows
  3. 6 ounces cream cheese
  4. 1 (6-ounce) package lemon flavored gelatin
  5. 20 ounces frozen red raspberries in syrup, drained
  6. 1 (20-ounce) can crushed pineapple, drained
  7. 3/4 cup chopped pecans
  8. 1 cup whipped topping (recommended: Cool Whip brand)

Instructions

  1. In a saucepan over low heat, combine lemon-lime beverage, marshmallows and cream cheese and stir until smooth. Remove mixture from heat and add lemon-flavored gelatin until dissolved. Stir in thr raspberries, pineapple and pecans and chill until mixture is the consistency of unbeaten egg whites. Fold in whipped topping and pour into a lightly oiled 5 cup gelatin mold. Chill until firm and serve.

I agree with Marcelle G.  I don’t believe the raspberries were intended to be an ingredient in this recipe.  I made it and it was as pink as Pepto Bismal.  Looked NOTHING like the picture or anything that would be called Lemon Cream Salad.  It tasted okay, but wasn’t what I was expecting.  Definitely something wrong with the recipe.  It seemed an odd technique to me to put 7-up, marshmallows and cream cheese on the stove to melt/blend.  Also, 20 ounces is a LOT of raspberries even if they were intended to be an ingredient.  I may try to make it again sometime, but without the raspberries and see how it comes out.

I made this salad for Christmas dinner last year and really liked it. The rasberries are a nice alternative for those that don’t care for cranberries. This can also be served as a dessert.

This is a yummy salad although it didn’t look at all like the picture with the recipe. Mine, like others, was more pink than yellow, but what the heck … it was very tasty.

Good on a hot day,but now to sweet.Good for bringing to a pot luck. Cut calories using low calorie Jello and soda.Every little bit helps and it is still good.

the first time I printed recipe, it left off when you add the raspberries, I added with the pineapple. I thought I would check to see if a correction was made and the instruction were added to stir in raspberries. I think the wrong correction was made. I beleive they never should have been listed as an ingredient. This would also explain why the picture has no red/pink tint to it. I think the recipe would probably be good if made as it was intented origianlly.

This was absolutely delicious, although it didn’t look as good when chilling in the mold. It won over people who didn’t think they’d eat it. I used lite cream cheese and cool whip and fresh raspberries.
