Cranberry Cashew Jumbles

Ingredients

  1. 1 cup firmly packed brown sugar
  2. 1/2 cup butter, softened
  3. 1/2 cup sour cream
  4. 1 egg
  5. 1 teaspoon vanilla extract
  6. 2 cups all-purpose flour
  7. 3/4 teaspoon baking powder
  8. 1/4 teaspoon baking soda
  9. 1 cup chopped salted cashews
  10. 5 ounces chopped dried cranberries
  11. 1 1/2 cups confectioners’ sugar
  12. 3 tablespoons orange juice

Instructions

  1. Preheat oven to 375 degrees F.
  2. In a large mixing bowl, combine brown sugar and butter. Beat at medium speed until creamy. Add sour cream, egg, and vanilla. Continue beating until mixed well. In a separate bowl, combne flour, baking powder and baking soda. Add flour mixture, a little at a time, and mix well. Stir in cashews and cranberries. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake for 10 to 12 minutes or until lightly browned. Cool completely.
  3. Frosting: Stir together confectioners’ sugar and orange juice in a small bowl. Drizzle over cooled cookies.

Has been a family favorite for years, always made for the holidays! As a variation, we eliminate the OJ and just add water and a dash of pumpkin pie spice to the glaze. Awesome!

Beautiful and delicious,easy and quick to make.
Definitely use the orange juice in making the glaze and just drizzle a little on the cookie; doesn’t need a lot of extra sweetness.

Delicious cookies, however I did not have sour cream so I substituted it with thinned down cream cheese to consistancy of a thick sour cream, and I added cinnamon. Then I made the recipe with listed ingredients. I think my adjusted recipe was much, much better
