This is the finest banana bread recipe I’ve ever had. The greatest I’ve ever had, for sure! It freezes well and is extremely wet. I also bake this in three mini loaf pans, although you might have to bake it for less time.

Ingredients

  1. 2 large eggs, beaten
  2. 1 cup mashed bananas
  3. ½ cup vegetable oil
  4. ⅓ cup buttermilk
  5. 1 ¾ cups all-purpose flour
  6. 1 ½ cups white sugar
  7. 1 teaspoon baking soda
  8. ½ teaspoon salt
  9. ½ cup chopped pecans (Optional)

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C). Grease a 9×5-inch loaf pan.
  2. Mix eggs, bananas, oil, and buttermilk together in a large bowl until well combined.
  3. Sift flour, sugar, baking soda, and salt into a separate large bowl. Stir flour mixture into the banana mixture until combined. Gently fold in pecans; pour batter into the prepared loaf pan.
  4. Bake in the preheated oven until a toothpick inserted in the center comes out clean, 1 hour and 20 minutes.

I made this recipe as written with the exception of a splash of vanilla and less sugar. I didn’t have buttermilk so I used reg milk and some plain yogurt and topped with dark chocolate chunks. It was a hit.

Great tasting Banana Bread. Was a little concerned because it was such a light color. I added chopped pecans and used powder buttermilk (Horror) and it turned out fine. I will be making this again and have already shared the recipe!! I ended up making muffins and small loaves. I did 1 1/2 batch. Thanks for sharing this recipe!

This is the best banana nut bread I’ve ever made!! The only thing I changed was I substituted the vegetable oil with avocado oil, and I put in a generous cup of pecans rather than a half a cup. It’s amazing. I will definitely recommend this recipe!

This a very soft flavorful bread. However, 325° for 1 hr & 20 min browned it a bit too much. I think I will try 350° for an hour next time. But the taste & texture are lovely so it still gets 5 stars. Ovens vary.

I followed the recipe nearly exactly (used just slightly more than 1 cup of bananas, and 1 full cup of chopped nuts) and divided into 2 smaller loaves, which cooked in about 40 min. The bread is moist and tender, but a little too sweet for my tastes. On the other hand, it’s an easy recipe to make! Will continue to use this recipe, but will cut down on the sugar.
