Whipped Cottage Cheese with Roasted Berries

With cottage cheese being the latest social media food craze, Ree has used some to create a light, luscious, super-simple treat. Cottage cheese is a great swap when you are eating a little lighter and it’s delicious when whipped and slightly sweetened.

Ingredients

  1. 1 1/2 cups frozen mixed berries
  2. 1 teaspoon brown sugar
  3. 1 1/2 cups cottage cheese
  4. 1 mounded tablespoon maple syrup
  5. 1 tablespoon vanilla bean paste

Instructions

  1. Preheat the oven to 450 degrees F.
  2. Add the berries to a small baking sheet. Toss with the brown sugar. Roast in the oven until they’ve deepened in color and created a syrup, about 12 minutes.
  3. Meanwhile, add the cottage cheese, maple syrup and vanilla bean paste to a small food processor. Process until smooth.
  4. Divide the cottage cheese mixture into two small bowls. Create a well in the middle with the back of a spoon. Add the berry mixture to the middle, drizzling the syrup from the pan over the top.

Such a delicious way to enjoy cottage cheese! Never would have thought to roast berries but they turned out great!! I’m an essential oil junkie and used Madagascar Vanilla instead of extract. Yum!

Made this for dessert tonight. Followed the recipe and it was delicious. Next time I plan on using just frozen blueberries so it will be seedless. Might just see how the compote comes out on the stovetop instead of the oven. Thinking that other fruits might be fun to try such as pineapple or apples.
