Tamarind Cooler

Ingredients

  1. 4 cups boiling water
  2. 1/4 cup firmly packed light brown sugar
  3. 2 to 3 tablespoons minced crystallized ginger
  4. 2 tablespoons tamarind paste
  5. 1 tablespoon fresh lemon juice, or more to taste
  6. Fresh mint sprigs, for garnish

Instructions

  1. In a bowl, whisk together the boiling water, brown sugar, ginger, and tamarind paste until the mixture is combined well. Let steep for 5 to 6 minutes, then add the lemon juice and let the mixture cool. Strain it through a fine sieve set over a pitcher and chill for 2 to 3 hours. Divide the cooler among tall glasses filled with ice cubes and a mint sprig.

This is a keeper! Refreshing with wonderful flavors. Lime juice works as well as lemon for the citrus. I had a jar of tamarind paste in the fridge so it was quick to make as well since I didn’t have to start from scratch to make the paste from tamarind pulp. For those who are trouble finding paste where you live, you might do a web search as it’s possible to have almost anything mailed via web order these days.

I loved the flavors in this drink. I did not have any tamarind paste but happened to have some tamarand nectar. This comes in a can and is already sweetened so I cut down on the sugar and added less water. It turned out excellent!

I generally find tamarind at my Indian grocer. If you have one, I almost guarantee they’ll have it. I’m in small town Ohio, but still they have a half dozen varieties.

I went to five stores one day and two the next looking for the tamarind paste…even Whole Foods didn’t have it and I tried the asian stores too….I finally found some tamarind liquid but it was from Thailand w/o any expiration date, the jar was dusty and I am leary of using it, not sure of the safety of the product…what do you suggest? Please share where I should find the tamarind!
