Sunny’s 5-Ingredient Lemon and Cheese Peas

Ingredients

  1. 1/2 cup (8 tablespoons) olive oil or salted butter
  2. 2 cloves garlic, minced or grated on a rasp grater
  3. Zest and juice of 1 lemon
  4. 4 tablespoons fresh thyme leaves, gently chopped
  5. Kosher salt and freshly ground black pepper
  6. 4 cups fresh spring, English or snow peas
  7. 8 to 12 ounces shaved or grated Pecorino-Romano cheese

Instructions

  1. In a pan on medium-low heat, add the olive oil (or butter), garlic and lemon zest. Cook, stirring, so the garlic and zest can steep without browning, about 5 minutes. Add the lemon juice, thyme, a pinch of salt and a few more grinds of black pepper than you normally would. Move the contents of the pan around a bit more while cooking, until the thyme is darker in color and the pan is fragrant, about 5 more minutes.
  2. Add the peas and toss to warm and coat, about 4 minutes. Pour into a serving dish and top with the cheese.

I only eat the early peas Leasure I hate regular peas 2 generations only eat the early peas they are sweet not starchy. I’m going to try it with my type of peas.

I loved these peas! I didn’t have fresh thyme so I used Italian seasoning. I used half butter and half olive oil and added some lemon pepper in addition to black pepper. Peas are an excellent source of vegetarian protein so I’m thrilled to add this into my rotation! Thank you, Sunny!

I watched Sunny make this on the show and wanted to try it. I love this show and get many recipes from it that the family loves, unfortunately this wasn’t one of them. For me I think it was just the flavor combination. I guess I just prefer my peas with just some salt and butter.
