Strawberry Shortcake Bars

Ingredients

  1. 1 cup white chocolate chips or melting wafers
  2. 1/3 cup heavy cream
  3. 1 cup amaretto cookies
  4. 1 cup freeze-dried strawberries
  5. 1 cup strawberry crispy cereal
  6. 4 frozen vanilla yogurt ice cream bars

Instructions

  1. Line a small baking sheet with parchment paper, wax paper or aluminum foil and set aside.
  2. Place the white chocolate in a medium bowl and set aside. Place the heavy cream in a microwave-safe bowl and heat on high for 1 minute, or bring to a simmer in a small pot over low heat. Pour the hot heavy cream over the white chocolate and let sit, stirring occasionally, until the chocolate has melted, about 5 minutes.
  3. Meanwhile, place the cookies and freeze-dried strawberries in a resealable plastic bag and gently crush with a rolling pin or skillet until everything is crushed and mostly gravel-sized (or crush toppings in a food processor). Place the toppings mixture in a large, shallow plate or baking dish along with the strawberry cereal.
  4. Working with one ice cream bar at a time, pour the white ganache all over a bar. Use a butter knife to spread the ganache to fully coat. Lay the bar on the plate with the toppings, pressing gently to adhere. Flip the bar over and continue pressing in the toppings to fully cover the bar.
  5. Place on the prepared baking sheet and immediately place in the freezer. Continue with the remaining bars and topping. Freeze the coated bars for at least 10 minutes before serving.

Okay, so you can’t buy Strawberry Rice Krispies any more. I improvised and used Cuetara strawberry wafers cookies found in the International section of the store. For the almond cookies, I used Molly’s Sprinkle Almond cookie recipe and cooked them a little longer to get them crispy. For the ice cream bar, I didn’t use yogurt, I got a brand called Nick’s Swedish-style Strawbar Swirl (delicious!!!) The original had a filling of strawberry inside the ice-cream, so this Strawbar Swirl mimics that more closely than just a plain vanilla yogurt bar. Super good, and better than the original in my opinion!!!

Would love to try, can anyone tell me where you would get the vanilla ice cream bars or frozen yogurt bars from? No place near me sells anything like that without them being chocolate covered. Would love to try these
