Ingredients
- 1 cup good-quality mayo
- 1 tablespoon freshly squeezed lemon juice
- 1 tablespoon raspberry preserves
- 1/2 teaspoon fresh lemon zest
- 1/8 teaspoon freshly ground black pepper
Instructions
- Mix the mayo, lemon juice, raspberry preserves, lemon zest and pepper in a bowl. Use on sandwiches.

Raspberry mayo??? There is NO way I would have normally tried this recipe except that Jeff made it sound so good. My husband and I were amazed – the flavor combination with the schnitzel and biscuit was great! I’ll never want a plain jane schnitzel again – this made it fabulous. I have to admit, I cheated and went by KFC on the way home for the biscuits :

Yum. Something different
This was quite an interesting recipe. Interesting, but awesome! I would have liked it so much more if the mayo was homemade. I want to learn how to make homemade mayo!
