Pineapple Ginger Vanilla Vodka

Ingredients

  1. 1/4 cup sugar
  2. 1/4 cup water
  3. 2-inch piece fresh ginger, peeled and chopped
  4. 1/2 vanilla bean, split and seeds scraped
  5. 2 cups fresh pineapple juice
  6. 3 cups fresh pineapple juice, poured into ice cube trays and frozen
  7. 1/4 cup vanilla vodka or plain vodka
  8. Mint sprigs, for garnish
  9. Pineapple slices, for garnish

Instructions

  1. Combine the sugar, water, ginger and vanilla bean and seeds in a small saucepan over medium heat and bring to a boil. Cook the mixture until the sugar is completely dissolved, about 1 minute. Cool at room temperature and strain.
  2. Combine the pineapple juice, 1 cup of pineapple cubes, the simple syrup and vodka in a blender and blend until smooth. Pour into glasses filled with pineapple cubes, if desired, and garnish with mint and pineapple slices.

Voli Vodka Lyte is definitely my go to as well. I like the other flavors but the lyte is has the lowest calorie count, it’s the best!

Not bad tasting! I would love definitely make another one. I agree with JoanSt about Voli Vodka, I was recently introduced to Voli Vodka Lyte from my husband and it’s a low calories vodka.. love it!

I actually make mine with Voli Vodka too! There are so many flavors! i get mine at the nearest Sam’s Club

This drink is perfect for a day around the pool. I made some for a few friends with the Voli lemon infused vodka. The lemon really balanced out the sweetness of the pineapple. Plus Voli vodkas have a third less calories than most vodkas, which is great since I’m a total gym rat and count those things.

This drink was so delish! Very refreshing. I followed the recipe exactly except I added some fresh pineapple and blended that up with everything else. Made it for Mother’s Day along with Cedar Plank Salmon FIsh Tacos, another recipe from Bobby’s show. Will definitely make again! Good job Bobby!
