Pineapple Cocktail

Ingredients

  1. 1 1/2 ounces pineapple juice
  2. 1-ounce vodka
  3. 1-ounce orange liqueur, recommended: Cointreau
  4. 1/2-ounce freshly squeezed lime juice
  5. Turbinado sugar, for the rim (optional)
  6. Fresh wedges of pineapple
  7. Maraschino cherry

Instructions

  1. Chill a martini glass in the freezer. Fill a cocktail shaker with ice. Add the pineapple juice, vodka, orange liqueur, and lime juice. Cover and shake vigorously, until combined and chilled, about 30 seconds. (In general, by the time the shaker mists up the drink is ready.)
  2. Scatter some turbinado sugar onto a small plate, wet the rim of the glass and dip into sugar. Strain the drink into the chilled glass. Skewer the pineapple and cherry and drop into the cocktail. Cheers.

This was GREAT – very refreshing!  Used up what was left of fresh pineapple juice from carving a pineapple and only had NA triple sec (I know, right?  Need to read those labels closer.).  I can see this being really excellent with a splash of ginger beer which I’ll try next time.

we made it for an Easter cocktail with dinner. instead of vodka, we substituted pineapple Rum. good thing i was home, i could have drank a lot of them. the sugar rimmed glass is even more sweetness that i could do without, but the boss loved it. making it again tomorrow night for Dingus Day in Buffalo.
