Ingredients
- 3 bunches carrots, peeled
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- Kosher salt
- 1 teaspoon minced fresh ginger
- 1 teaspoon grated orange zest
- 1/2 cup freshly squeezed orange juice
- 1/2 teaspoon freshly ground black pepper
Instructions
- Cut the carrots diagonally in 1-inch-thick slices. You should have about 5 cups of carrots. Place 1/2 cup water, the butter, honey, 2 teaspoons of salt, and the ginger in a large saute pan and bring to a boil. Add the carrots, cover the pan, and simmer over medium-low heat for 5 minutes. Remove the lid and continue to cook for about 20 minutes, or until all the water has evaporated. You may want to raise the heat for the last 5 minutes.
- Add the orange zest and orange juice to the pan, tossing with the carrots. Simmer uncovered for about 5 minutes, until the carrots are al dente (tender but still resistant when you bite) and the sauce glazes the carrots. Add the pepper and another teaspoon of salt, to taste.

As others said, the sauce wasn’t thick enough to glaze the carrots and my fav lady tends to use more salt than is normally needed.. I too made a slurry with cornstarch and additional brown sugar. The liquid did not want to reduce so there were a couple extra steps I did to correct the end result. That being said, I’ll make this again knowing what changes to make. Added fresh parsley to garnish.
This recipe was amazing. The orange juice and zest give the carrots such a bright flavor. Adding this to my regular rotation of veggies!
These were wonderful. I made them for Christmas Day dinner, and they were the perfect match to our beef roast. Will definitely be making it again.
The honey orange gave the carrots alittle lift of flavor!
As to the question on how much is 3 bunches. If you read the recipe it says 5 cups, measure your carrots after you cut them to see if you have 5 cups. I would not add salt until finished and then only to taste. Yes she uses kosher but you may not want any.
These honey-glazed carrots are easy and everyone loved them. I’m never boiling again.

You say 3 bunches of carrots one pound. If any of you could answer this question on how they measured 3 bunches. Thanks in advance…
