Mango Slaw

I love the freshness of this slaw in the summer. Slightly sweet and crunchy, it just packs a punch and goes great with a grilled and smoky pork tenderloin. You can also make the slaw ahead if you want, as it will remain great for at least eight hours.

Ingredients

  1. 1/2 cup extra-virgin olive oil
  2. 2 tablespoons honey
  3. 1/2 teaspoon celery seeds
  4. Kosher salt and freshly ground black pepper
  5. 1/2 cup chopped fresh cilantro
  6. Juice of 2 limes
  7. 2 large ripe but firm mangos, thinly sliced
  8. 2 scallions, finely sliced
  9. 1 to 2 jalapeños, sliced into thin rings (remove seeds and ribs if you’d like it milder)
  10. 1 carrot, peeled and grated
  11. 1/2 medium head green cabbage, cored and thinly sliced
  12. 1/2 medium head red cabbage, cored and thinly sliced

Instructions

  1. In a large mixing bowl, whisk together the olive oil, honey and celery seeds. Season with salt and pepper. Add the cilantro, lime juice, mango, scallions, jalapeños, carrots and green and red cabbage and toss to combine. Taste and season with more salt and pepper, if desired. Chill until ready to serve.

This is a great refreshing summer salad. I used one very large jalapeño and it was perfect. This will be on regular rotation. Love it!

Just delicious. I was concerned about the small amount of dressing but it was spot on. I had to use canned pineapple and it was still great. A+. Trader Joe’s has a bagged combination green, red and carrot slaw. Makes it simple.
