Lemony Broccolini

Ingredients

  1. 2 bunches broccolini
  2. 2 tablespoons salted butter
  3. 2 cloves garlic, minced
  4. Salt and freshly ground black pepper
  5. Grated zest and juice of 2 lemons

Instructions

  1. Bring a large pot of water to a boil. Prepare an ice water bath. Blanch the broccolini in the boiling water for 1 1/2 to 2 minutes. Immediately plunge into the ice water, then drain on paper towels.
  2. In a large skillet, melt the butter over medium-high heat. Add the garlic and cook for a minute, then throw in the broccolini. Toss to coat in the butter and garlic, then sprinkle with salt and pepper. Add the lemon zest and juice and continue cooking for a couple more minutes.

Zest AND juice of 2 lemons? This was way too lemony for us. And my husband is obsessed with lemon. I should’ve gone with my gut instinct when I was adding it… seemed too much at the time. I’ll make again with that adjustment.
