Lemon-Herb Compound Butter

Ingredients

  1. 4 tablespoons salted butter, at room temperature
  2. 1 tablespoon chopped fresh mint
  3. 1 tablespoon chopped fresh parsley
  4. 1 tablespoon chopped fresh tarragon
  5. 1/4 teaspoon red chile flakes
  6. Grated zest of 1 lemon
  7. 1 clove garlic, finely grated
  8. Freshly ground black pepper

Instructions

  1. In a small bowl, add the butter, mint, parsley, tarragon, chile flakes, lemon zest, garlic and black pepper to taste and mash it up with a fork. Transfer to a ramekin.

I have used this on chicken and fish and even modified it with the addition of mint for lamb!
