Ham Sliders with Sweet-and-Sour Pineapple Marmalade

Ingredients

  1. 1/2 cup fresh orange juice (from 2 oranges)
  2. 1/4 cup white wine vinegar
  3. 3 tablespoons packed light brown sugar
  4. 2 cups chopped pineapple (from 1/2 medium pineapple)
  5. 2 tablespoons minced red onion
  6. 1 jalapeno pepper, minced (remove ribs and seeds for a milder marmalade)
  7. Kosher salt and freshly ground pepper
  8. 1/2 pound thinly sliced ham
  9. 8 to 12 potato slider buns

Instructions

  1. Whisk the orange juice, vinegar, brown sugar and 2 tablespoons water in a medium saucepan over medium-high heat until the sugar dissolves, about 2 minutes. Add the pineapple, red onion and jalapeno. Bring to a low boil, then reduce the heat to a simmer. Cook, stirring occasionally, until the mixture thickens, 15 to 30 minutes. Season with salt and pepper. Let cool.
  2. Divide the ham among the buns. Top with the pineapple marmalade.
