Ingredients
- 3 tablespoons I Can’t Believe It’s Not Butter!® Original Soft Spread
- 3 1/2 tablespoons natural cane turbinado sugar
- A pinch (1/16 teaspoon) ground cardamom
- A pinch (1/16 teaspoon) nutmeg
- Zest of 1 lemon
- 4 slices gluten-free bread
- 4 tablespoons mascarpone cheese
- 1 pint fresh raspberries
- Lemon peel curls and fresh mint sprigs for garnish (optional)
Instructions
- 1. Preheat oven to 450 degrees F.
- 2. In a small bowl, combine the I Can’t Believe It’s Not Butter!® Original Soft Spread, turbinado sugar, cardamom, nutmeg, and lemon zest.
- 3. Spread the mixture evenly on four slices of bread. Place each piece of bread on a standard-sized baking sheet lined with parchment. Bake 5-7 minutes, until the Spread mixture on top begins to caramelize.
- 4. Remove toast from the oven and cool slightly before spreading 1 tablespoon of mascarpone cheese on each slice of toast, then top with fresh raspberries. Garnish, if desired, with lemon peel curls and mint sprigs.
