Ingredients

  1. 6 ripe plantains
  2. 8 cups chicken stock
  3. 1 1/2 pounds pork meat with fat, such as boned pork ribs
  4. Salt and pepper
  5. 6 cloves garlic, mashed
  6. Juice of 2 lemons
  7. 8 slices cooked bacon, crumbled
  8. 1/2 cup sliced green onions

Instructions

  1. Cut the ends off the plantains and discard. Slice each plantain into 2-inch chunks and score the skins with a knife along one edge. (Do not remove the peel.) Combine the plantains with the chicken stock in a large pot. Bring to a boil, then lower heat, cover and simmer until tender.
  2. Cut the pork into approximately 1-inch cubes. Season with salt, and place in a large sauce pan. Add enough water to just barely cover the pork. Bring to a boil and simmer, uncovered, until all of the water has boiled away and the pork begins to fry in the rendered fat. Continue to cook just until brown but not crispy. (The meat should be tender and stringy.)
  3. Remove the fully cooked plantains from the broth, reserving the broth. Peel the plantains. Mash the plantains with a little of the broth, just enough to make a soft paste, like mashed potatoes.
  4. Mash together the plantains, garlic and lemon juice. Mix in the pork and half of the bacon. Season with salt and pepper. Garnish the top with the remaining bacon and green onions and serve hot.

This is not fufu! Fufu is nothing but mashed cassava, water, and sometimes plantains!  It is a “swallow” bread you eat with stews. Where they got this I have no idea!

Following the recipe as written, it wasn’t very good. I think if the recipe was the same as the TV airing the results would be different. The mashed plantains gave the whole dish a heavy feeling and the lemon didn’t compliment the dish. Had the plantains been fried the texture and feel of the dish would have been very different. I’m also assuming fried plantains take on a slightly different taste that might meld better with the pork and lemon.

Just saw the recipe on GRK and Carl deep fried the boiled plantains. Going to make a big difference in flavor I suspect. I don’t know how the one and only person to review it so far could give it only four stars when they described it as terrific and one of the best things they have had or something to that effect. I’m giving four start because they left out a significant step in the actual recipe done on TV. They could have had u shallow fry them in a pan if they where thinking few people have deep fryers at home.
I really hate this new site — Safari takes you to something like the FN app and you cannot bookmark recipe in Safari but have to tag it then cannot access the tagged recipe because the button for that is not doing anything.
