These might be a social media sensation these days, but I took my inspiration from an afterschool snack I used to eat in the 1990s. I would mix equal parts cream cheese and marshmallow creme and use it as dip for my fruit. It’s delicious and addictive!

Ingredients
- 1 pint strawberries
- 1/2 cup cream cheese, at room temperature
- 1/2 cup marshmallow creme
- Grated chocolate or toasted coconut, for garnish
Instructions
- Using a paring knife, remove the top of each strawberry, cut in half lengthwise and remove the core. Pat the insides dry with a paper towel. Set aside.
- In a medium bowl, beat the cream cheese and marshmallow creme together with an electric mixer on medium speed until fluffy, 1 minute.
- Transfer the mixture to a piping bag or ziptop bag, snip the corner and pipe into the strawberry halves.
- Garnish with grated chocolate and/or toasted coconut. Refrigerate until serving time.

Does anyone have a recommendation of what type of chocolate to use?
This is my new favorite light summer evening break with a glass of wine while savoring summer evenings outside. Chocolate, coconut, all good, but, I think my favorite cheesecake reminiscent bite are those I sprinkle with Graham cracker crumbs!
These were so fun and delicious! I used too much marshmallow cream so mine turned very runny but still delicious! Perfect no-bake, light dessert.
