Cole slaw gets a tropical upgrade! Sliced mango, fresh lime juice, and sweet coconut milk are added to a bag of store-bought cole slaw mix for a light and bright take on slaw.

Instructions

  1. Whisk 3/4 cup canned coconut milk with the juice of 3 limes. Add one 14-ounce bag coleslaw mix, 1 mango (cut into matchsticks) and 1 cup chopped roasted salted peanuts; toss and season with salt and pepper.

AWFUL!  All we could taste was sour lime juice.  It wasn’t edible. I added more coconut milk, monk sugar, and raisins for sweetness and flavor. It was edible then but barely.

This was disgusting. Way too much lime. Used reduced fat coconut milk. Really, really awful. Trying to add honey honey

Saw other review, you need to use the canned coconut milk that you use for making pina coladas. Coco Lopez. It’s sweet, and the slaw is fantastic. I used roasted salted pecans instead of peanuts. Excellent!

I made exactly to the directions. Very sour and bitter. Added 2 Tbs palm sugar but it didn’t help. Definitely missing something that I can’t quite explain. Any suggestions??
