Chocolate-Covered Strawberry Tart

Ingredients

  1. 2 1/2 cups ground chocolate wafer cookies (about one 9-ounce package)
  2. 2 tablespoons sugar
  3. 1 stick (8 tablespoons) unsalted butter, melted
  4. 2 cups heavy cream
  5. 1/2 cup milk
  6. One 1.2-ounce bag freeze-dried strawberries
  7. One 12-ounce bag white chocolate chips
  8. 2 teaspoons vanilla
  9. 1 cup chocolate shell topping (for ice cream)
  10. 7 chocolate-covered strawberries drizzled with white chocolate
  11. 16 strawberries, hulled and sliced in half

Instructions

  1. For the crust: Preheat the oven to 350 degrees F.
  2. Mix together the chocolate wafer cookies and sugar in a large bowl. Pour in the melted butter and mix until well combined. Press the mixture into an 11-inch tart pan. Transfer to a baking sheet and bake for 10 minutes. Let cool completely.
  3. For the filling: Combine the cream, milk and freeze-dried strawberries in a medium pot. Bring to a simmer, remove from the heat and add the white chocolate chips and vanilla. Let stand for a few minutes to let the chocolate melt, then whisk until the chocolate is blended into the cream mixture. Transfer to a blender and blend until the strawberries are pureed and the mixture is smooth. Pour into the prepared crust and refrigerate until set, 3 to 4 hours. Once set, place in the freezer for 30 minutes.
  4. For the topping: Pour the chocolate shell topping over the filling to completely cover. Arrange the chocolate-covered strawberries in the center of the tart. Line up the sliced strawberries side-by-side and cut-side down around the edge of the tart with the pointed ends facing in towards the center of the tart. Slice with a warmed knife and serve.

Can I refrigerate the filling overnight for about 8 to 10 hours instead of refrigerating for 3 to 4 and then freezing it for 30 minutes

Made this 3 times now and always a huge hit.  Last time I added basil to the cream with the strawberries to steep then removed them prior to blending.  Gives just a hint of something extra

I think the freeze dried strawberries are a little pricey..$5.99 for .04 oz., but I wanted a special dessert for a friends b’day.  Did the strawberries around the tart, but facing the other way.   Spread a small circle of whipped cream in center and arranged chocolate curls on top of the cream….for someone who loves chocolate and strawberries this was s huge hit.

This was simple enough that my young sons could help prepare the dish. And it is absolutely delicious!! Very pretty presentation. Smooth and creamy center, nice crunchy crust. We didn’t bother with choc covered strawberries, there is plenty of choc on top of tart. Recommend for anyone who enjoys strawberries and chocolate!!
To answer the question posed in earlier review…plain chocolate wafer cookies. In our grocery they are located in the ice cream topping area ( why?? No idea! But they come in 9 oz packs and are conveniently next to the hardening chocolate topping you also need for this!!)
