Ingredients
- 2 cups diced or shredded roasted, grilled or poached chicken meat
- ½ cup chopped celery
- 1 Tablespoon minced shallots
- ¾ cup coarsely chopped pecans or walnuts
- 1 1/3 cups halved grapes, sliced lengthwise
- 10″ flour tortillas
- ½ cup light sour cream
- 1 tablespoon + 1 teaspoon Dijon-style mustard
- 2 teaspoons fresh lemon juice
- 1 Tablespoon grated lemon zest
- ½ teaspoon salt
- ¼ teaspoon pepper
Instructions
- Combine chicken, celery, shallots, grapes and pecans in bowl. Mix dressing ingredients thoroughly and add to chicken mixture. Chill until ready to serve. To make wrap, spoon ¾ cup of salad mixture onto middle of tortilla; roll it into a wrap and cut in half. Serve one half wrap sandwich with grapes and veggies for a hearty snack.
