Cherry and Pomegranate Sherbet

Ingredients

  1. 3 cups fresh or frozen cherries, pitted
  2. 1 cup sugar
  3. 1/2 cup pomegranate juice
  4. 1 1/2 cups whole milk
  5. 1 tablespoon heavy cream
  6. Juice of 1 lemon

Instructions

  1. Add the cherries to a saucepan with the sugar and pomegranate juice. Bring to a slow boil and cook until the cherries are soft and the liquid is syrupy, 15 to 20 minutes. Cool to room temperature. 
  2. Add the cherries and juice to a blender or food processor. Blend until smooth, stopping short of totally liquefying it if you’d like a little pulp. Add the milk, cream and lemon juice and blend briefly. Freeze according to your ice cream maker’s instructions, and then transfer to an airtight freezer container and freeze for at least 24 hours before serving. 
  3. Scoop into a pretty glass and serve. If you’re feeling dangerous, mix with a little cold white wine for a delicious “milkshake.” Just don’t tell anyone I told you to do that.

I’ve made ice cream many times but this was my first attempt to make sorbet. The recipe is so creamy, delicious and so much more refreshing than ice cream!! I made two batches; one with chocolate chips. I also made some recipe revisions:

Used Greek cherry yogurt instead of milk
Used little less than 3/4 cups sugar instead of one cup
Added 1/2 cups of mini chocolate chips

I don’t particularly care for sherbet, but I love cherries and pomegranate juice so I decided to give it a try. I must say that this was absolutely wonderful! Smooth and creamy with bits of cherries all through it. I can’t wait to make this again.

This was delish. I added an extra tablespoon of cream and a teaspoon of corn starch. It wasn’t to sweet it was just right.This is a winner in my book. Will be making it again.
