Banana-Coconut Daiquiri

Ingredients

  1. 1 large banana, sliced
  2. 1/2 cup white rum (or coconut water)
  3. 1/3 cup canned cream of coconut (such as Coco López)
  4. 1/4 cup fresh lime juice (from 2 limes)
  5. Maraschino cherries, for garnish

Instructions

  1. Freeze the banana slices on a plate until firm, at least 3 hours or overnight.
  2. Transfer the banana slices to a blender. Add the rum, cream of coconut, lime juice and 3 cups ice. Blend until smooth and thick, adding more ice if needed. Pour into large glasses; garnish each with a cherry.

Love these! So easy to make, so refreshing. Make sure to get the sweetened canned cream of coconut (in our grocery stores it’s in the same aisle as the sweetened condensed milk and non-dairy creamers). 

We make these daiquiris all the time.
