Sausage and Red Pepper Frittata

This easy frittata recipe is the perfect option for when you are craving the classic Italian combo of sausage and peppers. Cooking the peppers and onions before adding the egg ensures every bite out of the oven is sweet and tender.

Ingredients

  1. 1 tablespoon olive oil
  2. 8 ounces sweet Italian sausage, casings removed and broken into small pieces
  3. 1 medium red bell pepper, diced
  4. 1 small onion, diced
  5. 1 tablespoon chopped fresh rosemary
  6. 12 large eggs
  7. 1/3 cup heavy cream
  8. 1 cup shredded Italian blend cheese
  9. Kosher salt and freshly ground black pepper

Instructions

  1. Preheat the oven to 300 degrees F.
  2. Heat the olive oil in an oven-safe, 10-inch nonstick skillet over medium-high heat. Add the sausage and cook, stirring occasionally and breaking up the pieces with a wooden spoon, until no longer pink in the middle and cooked through, 6 to 7 minutes. Use a slotted spoon to remove the sausage to a plate. Add the pepper and onion to the skillet and cook, stirring occasionally, until softened, 5 to 6 minutes. Stir in the rosemary and cook until just fragrant, about 1 minute.  
  3. Meanwhile, whisk the eggs, cream, cheese, 1 teaspoon salt and a few grinds of black pepper together in a large bowl until combined. Remove the skillet from the heat and add the sausage. Pour the egg mixture on top and gently stir to incorporate the fillings. Bake until the eggs are just set and no longer jiggly in the middle, 50 to 55 minutes.  
  4. Let sit for 5 minutes before sliding the frittata out of the skillet onto a serving platter. Slice into wedges to serve.

This was delicious. However I made two changes because of what I had on hand. Used 10 eggs instead of 12 and 12 oz sausage instead of 8 oz. Everyone enjoyed it. Went with one hour on the cook time just because of my oven. Cooked perfect.

Meh. OK. It’s not gonna Beat Bobby Flay any time soon. Needed something fresh like basil instead of rosemary.
