Peach and Bacon Frittata

Ingredients

  1. 8 eggs
  2. Kosher salt and freshly ground black pepper
  3. 2 peaches, cut into 1-inch pieces
  4. 1 1/2 tablespoons chopped fresh chives
  5. 8 ounces applewood-smoked bacon, cut into 1/3-inch pieces

Instructions

  1. Preheat the oven the 425 degrees F.
  2. Break the eggs into a medium bowl and whisk until smooth. Whisk in 1/2 teaspoon salt and 1/4 teaspoon pepper. Add the peaches and chives and stir to combine.
  3. Place the bacon in a 10-inch ovenproof nonstick skillet. Set over medium heat and cook, stirring often with a rubber spatula, until the bacon is crispy and browned, about 10 minutes. Drain off all but 2 tablespoons of the fat from the pan. Return the pan to the heat and add the egg mixture. Cook for 1 minute, slowly scraping the bottom of the pan with the spatula. Smooth the top of the frittata and transfer the pan to the oven. Bake until the center is just set, 8 to 10 minutes. Let cool slightly before slicing.

This recipe looked tasty and simple to make but wasn’t well received. Everyone thought it was bland and needed some help. I agree with one of the other reviewers that goat cheese might be a good addition. I also think that reserving half of the bacon and sprinkling on the top side after it’s set would help to impart the flavor throughout.

We had an abundance of western slope peaches so I made this. Halved the recipe since I was cooking for 2. We loved it. Would make it for others as a summer brunch dish.

Really disappointing.  Boring and flavorless.  Needs some goat cheese or something else to spice up the eggs.

I saw Giada making this and was taken back with the combo of bacon and peaches.  I didn’t have freash peaches on hand but tried it with canned peaches.  I would make it again.  The peach and bacon both had a stand out flavor.  Very good.

I saw this on the TV show and was intrigued by the combination.  It was very tasty!  Easy to make, yummy, colors are bright and attractive on the plate, I will be making this again.
