Ingredients
- 8 eggs
- 2 teaspoons minced fresh rosemary
- Pinch red pepper flakes
- Kosher salt and freshly ground black pepper
- 4 tablespoons unsalted butter
- 1 small onion, finely chopped
- 1/2 cup cherry or grape tomatoes
- 2 cups finely chopped leafy greens (Swiss chard, collards, mustard or kale)
- 4 ounces fresh goat cheese, at room temperature
Instructions
- Preheat the oven to 350 degrees F.
- Whisk together the eggs, rosemary, red pepper flakes, 1/2 teaspoon salt and 1/4 teaspoon black pepper in a bowl.
- Melt the butter in a cast-iron skillet. Add the onions and tomatoes, and saute until the onions are soft and the tomatoes are starting to burst, about 5 minutes. Add the greens, 1/2 teaspoon salt and some pepper; saute for another 2 minutes.
- Turn down the heat to low and pour in the eggs. Using a rubber spatula, very gently move the eggs around a bit — not scrambling them, just massaging them into the cracks and crevasses of the greens.
- Once the eggs start to set on the bottom, dollop with the goat cheese and transfer the skillet to the oven. Bake until the frittata is set on top, 5 minutes.

Reviews
This frittata is incredible. I didn’t know I liked goat cheese but now I do! I had never thought of putting Rosemary into my eggs and it really made it incredible. From now on this is the frittata I will make. I do think next time I might try adding Kalamata olives. I hope this show stays on. I’m with the girl review earlier about all the competition shows. I’m here to learn to cook better if I wanted to watch a game show you can do that anywhere. Don’t get me wrong I love Food Network.
I LOVED this show. We need more of these wholesome shows. I have seen FN slowly making most of their shows more about competition. Yes, there is a place for these shows, but they have been taking over the network. Please bring back the shows that keep it real.
Made this on Christmas & it was a hit! So delicious! Shaye’s a keeper – down home, simple, REAL food!!
All day, every day. This the kind of food I love to and want to eat. I am so lucky to live close to excellent goat cheese makers, and I get my fresh eggs and chard from friends. This is the kind of food I love to make and eat. Please keep this type of programming on the air! What a beautiful recipe. I used thyme instead of rosemary, because that’s just my jam, but It would excellent with any herbs, or a combination thereof. GREAT job Shaye!
Love the show, made for breakfast for my family! i am hoping there are many more shows
I love the show. I just saw it today and haven’t tried the recipes, but frittata for breakfast tomorrow. Hope for many more shows. But Shaye, please please would you give measurements as you go.
Outstanding ,never seen this show but I really like it, home cooking from the farm fresh and wholesome ,I hope Shaye will have more shows on food network ,she is a naturel and I’m going to make this frittata
Oh my gosh!!! This is delicious and my house smells amazing!!! I prepared this to take to the office for our 12 days of Christmas and everyone raved about it. I did not want to lug a cast iron skillet to work so I sautéed everything in the skillet, then transferred to a glass baking dish, poured the egg mixture over the veggies, and baked for about 35 minutes or so. Recipe is being circulated as we speak! I loved watching Shaye’s show and hope you will make her a regular!!! PLEASE!!!
Love this show, hope it continues. Will be making this for Christmas.
This recipe is amazing (I did substitute dill for rosemary). We made several recipes from this episode – love this show!
