Ingredients
- 1 tablespoon unsalted butter
- 1 pound bulk sausage
- 10 ounces fresh spinach
- 1 dozen large eggs
- Kosher salt and freshly ground black pepper
- 8 ounces Cheddar, grated
Instructions
- Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish thoroughly with the butter.
- Heat a pan over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 5 to 8 minutes. Add the spinach and cook until wilted, about 1 minute. Set aside to cool.
- Whisk the eggs in a large bowl with some salt and pepper. Add the cheese and stir until combined. Mix in the cooled sausage and spinach mixture.
- Pour the egg mixture into the prepared baking dish and bake until the eggs are cooked through and firm, 20 to 30 minutes. Let cool slightly, about 5 minutes, then cut into squares and serve.

This is such a great recipe. It’s so easy to make and yummy too. You can do so much with it. I added red bell peppers and onions in mine. So versatile. Thank you GZ
This was pretty good. I made for a party, so I added 6 eggs, 2 cups milk and red peppers. I also drained/strained the meat/veggie mixture before adding in. Then I put on a large sheet pan and was able to cut into 64 triangle servings. Next time I will probably use 2 dozen eggs so they are a little taller.
Delicious.
Absolutely loved this recipe! Can’t wait to make again. I didn’t add any salt or pepper. The sausage had enough salt and spice for us. Added some chopped red bell pepper for taste and color. My husband is a very picky eater, but even asked for seconds; a first!
Love it! So easy too 🙂 This meal has become a go to recipe. I keep getting requests for my guests at every event!
I thought it would be a great way to make a creamy mac n’ cheese! Mine curdled! I used Vermont sharp & pepper jack. Very disappointed!
Great for feeding a crowd!
So easy and absolutely delicious
This has become a go-to recipe for me. Easy, delicious and low-carb! I’ve even made it for company and it was a hit. Great to portion and take during the work week. A winner!
