Breakfast Frittata Squares

Ingredients

  1. 1 tablespoon unsalted butter
  2. 1 pound bulk sausage
  3. 10 ounces fresh spinach
  4. 1 dozen large eggs
  5. Kosher salt and freshly ground black pepper
  6. 8 ounces Cheddar, grated

Instructions

  1. Preheat the oven to 350 degrees F. Grease a 9-by-13-inch baking dish thoroughly with the butter.
  2. Heat a pan over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 5 to 8 minutes. Add the spinach and cook until wilted, about 1 minute. Set aside to cool.
  3. Whisk the eggs in a large bowl with some salt and pepper. Add the cheese and stir until combined. Mix in the cooled sausage and spinach mixture.
  4. Pour the egg mixture into the prepared baking dish and bake until the eggs are cooked through and firm, 20 to 30 minutes. Let cool slightly, about 5 minutes, then cut into squares and serve.

This was pretty good. I made for a party, so I added 6 eggs, 2 cups milk and red peppers. I also drained/strained the meat/veggie mixture before adding in. Then I put on a large sheet pan and was able to cut into 64 triangle servings. Next time I will probably use 2 dozen eggs so they are a little taller.

Absolutely loved this recipe! Can’t wait to make again. I didn’t add any salt or pepper. The sausage had enough salt and spice for us. Added some chopped red bell pepper for taste and color. My husband is a very picky eater, but even asked for seconds; a first!
