Ingredients
- 2 tablespoons unsalted butter
- 1 small onion, finely chopped
- 1 bunch thin asparagus, trimmed and cut into 1-inch pieces (about 2 cups)
- 4 large eggs
- 1/2 cup heavy cream
- Kosher salt and freshly ground black pepper
- 1 cup crumbled feta
Instructions
- Preheat the broiler. Melt the butter in a 9-inch cast-iron frying pan. Add the onions and saute until they are softened, about 5 minutes. Add the asparagus and cook until just softened, 2 minutes.
- Whisk together the eggs, cream, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl until smooth. Fold in the feta. Pour the egg mixture over the asparagus mixture and cook until almost set, 2 to 4 minutes. Transfer the skillet to the broiler and cook until golden brown on top, 8 to 10 minutes. Serve warm or at room temperature.

My all time favorite breakfast when guests are over
Wish I had paid better attention to the other reviews as the top was burned after 5 minutes under the broiler, but like the others, I scraped off the burned part and thoroughly enjoyed the rest. This is a keeper, very tasty, and a great way to use the excess asparagus when this single lady buys the 4-pound package of asparagus at Sam’s Club.
Easy, tasty and I will definitely make this again. So light and I might try this with 2 cups of other veggies sometime.
I also used my cast iron enameled lined pan with2 t butter and pretty much doubled most of the ingreients. I also addes red pepper, mushrooms, sliced roma tomatoes, garlic and parmessan. The feta totally makes this dish!

Really easy to put together and tasty. Added 2 fresh tomatoes and some grated Parmesan on top. Only needed to broil for about 4 minutes.
Tastes great! But watch it closely because it cooked up in the oven on broil in only 3 minutes. I didn’t have any trouble with it sticking to the pan using a cast iron as suggested.
Watch it closely. It burned the top after 6 1/2 minutes. Had to scrape off the top. I will broil for 4-5 minutes next time.

Delicious!! Easy to fix for a quick meal but much fancier than scrambled eggs. I’m already thinking of several different versions with tomatoes, peppers and other cheeses.
