Ingredients

  1. 1 16-to-20-ounce bag frozen sweet potato fries
  2. 3 strips bacon, chopped
  3. 2 tablespoons packed dark brown sugar
  4. 1 tablespoon fish sauce
  5. 2 teaspoons Asian chile sauce (such as Sriracha)
  6. 1 1/2 tablespoons lime juice
  7. 1/2 teaspoon grated lime zest
  8. 2 tablespoons chopped fresh cilantro
  9. Prepared fried onions or fried shallots, for topping

Instructions

  1. Bake the sweet potato fries as the label directs. 
  2. Meanwhile, cook the bacon in a skillet over medium heat until crisp, about 8 minutes; remove with a slotted spoon and drain on paper towels. Remove the skillet from the heat and add the brown sugar, fish sauce, chile sauce, lime juice and lime zest to the drippings. Stir until the sugar dissolves. 
  3. Transfer the fries to a serving dish. Drizzle with the chile sauce mixture, then sprinkle with the bacon, cilantro and fried onions.

10+ years later and I still make this from time to time! So so so good. Umami to the max. I use fresh sweet potatoes and bake them with olive oil. I sub soy sauce with coconut aminos and skip the sugar. One of my favorites..,thank goodness I pulled that recipe from the back of Food Network Magazine back in the day!

I made this. It it might potential but I really had to add ingredients. I used good quality fish sauce and it really ruined the flavor. Better to leave it out and use light soy or oyster sauce instead. Bacon didn’t cling to to fries and they ended up at the bottom of the plate.  The lime flavor was nice so I will use that in a butter sauce on a real sweet potato. Most people who gave this five stars did not make it, they only rated it on appearance and trying to give it a name. Better to make the sweet potato fries and add a dipping sauce on the side.
