Mojo Fries

Ingredients

  1. Nonstick spray
  2. 2 medium russet potatoes, scrubbed well
  3. 1/4 cup canola oil
  4. Kosher salt and freshly ground black pepper
  5. Zest of 1 lime
  6. 1 clove garlic, minced
  7. 1 tablespoon finely chopped fresh parsley
  8. 1 tablespoon finely chopped fresh cilantro
  9. 1 tablespoon finely chopped fresh mint
  10. Pinch of red pepper flakes

Instructions

  1. Preheat the oven to 425 degrees F. Coat 2 sheet trays with nonstick spray.
  2. Cut potatoes into 1/4-inch strips using a mandoline and pat dry. Divide the potatoes between the sheet trays and toss with olive oil, salt, and pepper and spread the potatoes in a single layer. Bake until the potatoes are golden brown and crisp, about 35 minutes, turning once with a spatula halfway through baking.
  3. Remove the potatoes from the oven and while still hot, toss with the lime zest, garlic, parsley, cilantro, mint, and red pepper flakes. Serve hot.

These fries are AMAZING ! I made 2 pans as the Neely’s called for ., but I made one pan mojo and one pan with just salt and pepper (traditional fries). 

I tweaked the mojo fries to suit our tastes, since I omitted the lime zest, cilantro and mint. I just added the garlic , parsley and the red pepper flakes , salt and pepper for the mojo fries. 
These fries tastes exactly like crispy deep fried french fries!
Both pans came out PERFECT ! SO SO yummy, and guilt free !!
I had NO leftovers !!  
 I have to add, this french fry recipe will replace my favorite baked fries recipe. This recipe is MUCH easier, since with my old recipe I had to soak my potatoes in water and then take all the trouble to dry them.
With the ease of this recipe, I will be making homemade french fries a lot more often now !!!

This is a tastey version of baked fries, but I always soak my cut fries and soak them in a big bowl of water for about 15-20 minutes, drain the water, pat dry the cut potatoes and then bake as instructed. This step helps make the potatoes crispy and better.
