Crispy Oven Fries with Feta-Red Pepper Dip

Ingredients

  1. 3 tablespoons kosher salt, plus more to taste
  2. 2 pounds russet potatoes, cut into wedges
  3. 3 tablespoons unsalted butter, melted
  4. Freshly ground black pepper
  5. One 8-ounce jar roasted red bell peppers (see Cook’s Note)
  6. 2 ounces feta, coarsely chopped
  7. 3/4 cup toasted walnuts or almonds
  8. 2 tablespoons olive oil
  9. 1 tablespoon honey
  10. 2 teaspoons lemon juice
  11. 1/2 teaspoon ground cumin
  12. 1/4 teaspoon crushed red pepper
  13. 1 clove garlic
  14. Kosher salt and freshly ground black pepper

Instructions

  1. For the fries: Dissolve the salt in a large bowl of cold water and add 1 cup of ice cubes. Submerge the potato wedges and soak for 20 minutes.
  2. Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper and set aside.
  3. Drain the potatoes and pat them dry. Toss them in the butter and season with salt and pepper. Transfer them to the prepared baking sheet and bake, tossing halfway through, until browned, about 1 hour. Add additional salt and pepper if desired.
  4. For the feta-red pepper dip: Combine the bell pepper, feta, nuts, olive oil, honey, lemon juice, cumin, crushed red pepper, garlic, a pinch of salt and a few turns of black pepper in a food processor and blend until smooth. Taste and adjust seasonings as desired.
  5. Top the fries with the feta-red pepper dip and serve.

These were great, I have no problem with the 450 heat using parchment paper I cut to fit the tray and just put potatoes on it. Everyone oven different should check the fries half way through cooking time

The 2 stars is for flavor only! I KNEW 450 degrees for an hour was too long but even when cutting that time in half it was too long at such a high temperature. Next time I’ll drop the temperature a bit and still use 30 minutes. I definitely did NOT use parchment paper because I’ve never seen a parchment paper safe to 450 degrees. I can’t believe all the 5 star reviews. I wasted a lot of potatoes on this.

This recipe is dangerous and could cause a fire! Most parchment paper available in grocery stores is only rated for up to 420  degrees.

Yum, yum, and even more yum ! Perfect snack for my Friday night sleepovers with my grandson and great niece. I also gave them candy bar salads the next day (right before they went home), they LOVED it all.
