Ingredients
- 4 carrots
- 2 tablespoons olive oil
- 2 teaspoons freshly ground black pepper
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1 teaspoon fresh thyme, minced
- 1/2 cup ketchup
- 1/2 cup bottled ranch dressing
Instructions
- Preheat the oven to 425 degrees F.
- Trim the ends off the carrots and halve crosswise. Halve the carrots lengthwise, then cut lengthwise again in half or thirds, depending on the size, to create equal-size sticks.
- In a mixing bowl, toss together the carrots, olive oil, pepper, garlic powder, salt and thyme. Transfer to a baking sheet and spread into a single layer. Bake, flipping halfway through, until the carrots are cooked through and the edges begin to crisp, 18 to 20 minutes.
- Meanwhile, mix together the ketchup and ranch in a small bowl. Serve the carrot fries with the ketchupy ranch.

I love these carrot “fries”! I use them as a side dish with salmon and quinoa salad! The thyme adds a delicious flavor to the carrots!
Simple, delicious roasted carrots, not sure I would really call them fries, but good none the less. I was not a fan of the ketchup ranch. I will keep making the rest of recipe for sure!
This is a keeper! I thought 1 teaspoon of salt wouldn’t have been enough given that pepper was two teaspoons but it actually was a tad too salty for my diet restrictions. But…I loved it! My husband was skeptical while I was making it but he really like it also.
