Ingredients
- Light oil, such as vegetable or olive, for frying
- 4 eggs
- 1 cup all-purpose flour
- 1 1/2 teaspoons paprika
- 1 teaspoon Cajun seasoning
- 1 teaspoon onion powder
- 1 teaspoon seasoning salt
- 1/2 teaspoon baking powder
- 1 teaspoon cayenne pepper
- Salt and pepper
- 1 cup lager beer or ale
- 1 to 3 avocados (depending on size), cut into thick wedges (choose mildly ripe avocados for best taste and firmness)
- 1 cup panko breadcrumbs
- Lemon or lime wedges, for serving
- Sour Cream Lime or Chipotle Ranch, recipes follow, optional
- 1 cup sour cream
- 1/2 teaspoon grated lime zest plus 2 tablespoons lime juice
- 2 tablespoons chopped fresh cilantro
- 1/2 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon cayenne pepper
- 1 cup quality ranch dressing
- 1 tablespoon fresh lime juice
- 1/4 teaspoon salt
- 4 chipotle chiles in adobo sauce, drained
Instructions
- Heat the oil to 350 degrees F in a deep-fryer or a Dutch oven fitted with a deep-fry thermometer.
- Whisk together the eggs in a bowl. Add the flour, paprika, Cajun seasoning, onion powder, seasoning salt, baking powder, cayenne, salt and pepper.
- Slowly add the beer. Continue to whisk until smooth. Coat each avocado wedge thoroughly, shaking off any excess batter. In a separate wide bowl, place the wedges in the panko until completely covered. (Be sure to minimize clumping of batter or breading.) Place each wedge into the oil. Fry until lightly crisp and golden brown in color, 3 to 5 minutes.
- Squeeze lemon or lime on top to enhance flavors. Dip in sauce, if desired.
- Whisk together the sour cream, lime zest and juice, cilantro, cumin, salt and cayenne in a bowl. Keep refrigerated.
- In blender, place the dressing, lime juice, salt and chiles. Cover and blend until smooth. Keep refrigerated.
