California Avocado Fries

Ingredients

  1. Light oil, such as vegetable or olive, for frying
  2. 4 eggs
  3. 1 cup all-purpose flour
  4. 1 1/2 teaspoons paprika
  5. 1 teaspoon Cajun seasoning
  6. 1 teaspoon onion powder
  7. 1 teaspoon seasoning salt
  8. 1/2 teaspoon baking powder
  9. 1 teaspoon cayenne pepper
  10. Salt and pepper
  11. 1 cup lager beer or ale
  12. 1 to 3 avocados (depending on size), cut into thick wedges (choose mildly ripe avocados for best taste and firmness)
  13. 1 cup panko breadcrumbs
  14. Lemon or lime wedges, for serving
  15. Sour Cream Lime or Chipotle Ranch, recipes follow, optional
  16. 1 cup sour cream
  17. 1/2 teaspoon grated lime zest plus 2 tablespoons lime juice
  18. 2 tablespoons chopped fresh cilantro
  19. 1/2 teaspoon ground cumin
  20. 1/4 teaspoon salt
  21. 1/8 teaspoon cayenne pepper
  22. 1 cup quality ranch dressing
  23. 1 tablespoon fresh lime juice
  24. 1/4 teaspoon salt
  25. 4 chipotle chiles in adobo sauce, drained

Instructions

  1. Heat the oil to 350 degrees F in a deep-fryer or a Dutch oven fitted with a deep-fry thermometer.
  2. Whisk together the eggs in a bowl. Add the flour, paprika, Cajun seasoning, onion powder, seasoning salt, baking powder, cayenne, salt and pepper.
  3. Slowly add the beer. Continue to whisk until smooth. Coat each avocado wedge thoroughly, shaking off any excess batter. In a separate wide bowl, place the wedges in the panko until completely covered. (Be sure to minimize clumping of batter or breading.) Place each wedge into the oil. Fry until lightly crisp and golden brown in color, 3 to 5 minutes.
  4. Squeeze lemon or lime on top to enhance flavors. Dip in sauce, if desired.
  5. Whisk together the sour cream, lime zest and juice, cilantro, cumin, salt and cayenne in a bowl. Keep refrigerated.
  6. In blender, place the dressing, lime juice, salt and chiles. Cover and blend until smooth. Keep refrigerated.
