Crispy Hawaiian Fried Rice

Ingredients

  1. 3 tablespoons vegetable oil
  2. 4 to 5 slices deli ham
  3. 1 teaspoon barbecue spice rub
  4. 3 scallions, sliced thin on the bias, white and green parts separated
  5. 4 cups cooked rice
  6. 2 tablespoons hoisin sauce
  7. 2 tablespoons soy sauce
  8. 1 tablespoon chile garlic sauce, chile paste or curry paste, optional
  9. 1 tablespoon grated fresh ginger
  10. 1/2 cup frozen peas
  11. 1/4 cup fresh, frozen or canned pineapple, chopped
  12. 1 large egg, cooked sunny-side up
  13. 1 teaspoon canned french-fried onions
  14. 1 teaspoon black sesame seeds

Instructions

  1. Heat 1 tablespoon oil in a large nonstick skillet over medium-high heat. Add the ham, barbecue spice and scallion whites. Saute for 2 to 3 minutes.
  2. Lower the heat to medium. Toss the rice with the remaining 2 tablespoons oil in a medium bowl. Add to the skillet and quickly stir so the ham and scallions get evenly distributed in the rice. Cook without stirring for 5 minutes so the bottom gets crispy.
  3. Combine the hoisin, soy, chile sauce and ginger in a small bowl and whisk together. Add the sauce to the skillet along with the peas and pineapple. Stir gently to combine, retaining the crispy bottom. Serve immediately topped with the fried egg, french-fried onions, sesame seeds and scallion greens.

Freaking delicious !  I used white onion in stead of green, and 1/4 teaspoon dried ginger instead of fresh. Getting the rice crispy is the key along with that oh so runny egg.

Every year for the past 30 years,  my husband and I make a traditional bone-in ham for Easter and we wind up with an  abundance of ham in the freezer that lasts for months.  No truer words were spoken when  Dorothy Parker said “Eternity is a ham and two people”.   After about 6 weeks, we struggle with finding new ways to transform “the ham” into something that doesn’t remind us that we are eating ham.  The day this aired, it was a scheduled “ham night” and luckily I had all the ingredients on hand.  I followed the recipe exactly.  Wow! It is absolutely delicious– the crispy crust, the hint of sweetness from the pineapple and that creamy, oozing egg yolk was pure bliss for our ham weary stomachs.  Total game-changer in our quest to finish the Easter ham by the end of June.
