Chicken with Chorizo and Cannellini

Ingredients

  1. 2 cups chicken stock
  2. 1 free-range chicken supreme (or skinless breast)
  3. Approximately 4 1/2-ounces trimmed kale (a generous 1/2 cup)
  4. 1 to 2 teaspoons olive oil (not extra-virgin)
  5. 4 ounces chorizo sausage, sliced then chopped
  6. 1 (14-ounce) can cannellini beans, drained
  7. Smoked sweet paprika, for garnish

Instructions

  1. In a saucepan, bring the stock to a gentle boil, lower in the chicken and cook, still gently, for 10 minutes or until all trace of pink has disappeared. Pierce with the point of a knife to check.
  2. Meanwhile, cook the kale, which you’ve roughly torn into pieces, in boiling salted water for about 5 minutes (if it’s tough) and drain. Then heat the oil in a frying pan, throw in the chopped chorizo, add the drained cannellini and, stirring, warm everything through, moistening with a couple of tablespoons or so of the chicken stock – or more if you want this soupier.
  3. Tip the beans and chorizo into a shallow bowl or lipped plate, roughly arrange the kale on top (drizzling with a little extra-virgin olive oil if you like) and then lift the cooked chicken out of the stock with a spatula and sit this on top of the kale. Sprinkle the pale chicken breast with the paprika and gaze at your Spanish still life of a supper before eating it.

Absolutely delicious Nigella! Real, filling comfort food with the added bonus of having lots left over for lunches! Sometimes I tend to really overdo it and when that’s the case, I can feed friends or my darling French Mastiffs who are only too happy for a bit of human food! Makes them feel loved.

I made this for my husband and he LOVED IT! I used spinach instead of kale. The chicken is so tender and the chorizo makes the beans rich and decadent.

I’ve made this before and it’s always a hit.

This dish was really easy, but seemed like too much chorizo for me. Considering how few ingredients there are the sausage does add a nice flavor, but reminded me too much of beef jerky in taste and it being a bit chewy. All in all an easy dinner for one option, but is enough to feed two for sure.
