Wrightsville Beach French Toast

Ingredients

  1. 1 pound margarine
  2. 2 pounds granulated sugar
  3. 3/4 pound all-purpose flour
  4. 3/4 ounces ground cinnamon
  5. 1/4 ounce cocoa powder
  6. 1 1/2 cups vegetable oil
  7. 1/4 cup water
  8. 7 pounds high-gluten flour
  9. 4 cups sourdough starter
  10. 4 cups water
  11. 4 ounces granulated sugar
  12. 4 ounces yeast
  13. 2 ounces salt
  14. 1 1/2 cups vegetable oil
  15. Cinnamon-sugar, for sprinkling
  16. Raisins, for sprinkling
  17. 2 cups heavy cream
  18. 1/2 cup powdered sugar
  19. 1/2 cup maple syrup
  20. 8 cups eggs
  21. 3 cups whole milk
  22. 2 cups heavy cream
  23. 1 cup maple syrup
  24. 1/2 cup spiced rum
  25. 2 teaspoons ground cinnamon
  26. 2 teaspoons ground nutmeg
  27. 2 thick slices cinnamon raisin bread
  28. Maple mousse, as needed
  29. Powdered sugar, for sprinkling
  30. Fresh berries, for garnish

Instructions

  1. For the cinnamon smear: Cream the margarine and sugar in a large bowl. Add the flour, cinnamon and cocoa powder. Slowly add the oil and water. Mix for 15 minutes and let rest for 5 minutes.
  2. For the cinnamon raisin bread: Mix the flour, starter, water, granulated sugar, yeast, salt and oil in a large stand mixer fitted with the paddle attachment for 15 minutes. Let rest.
  3. Portion the dough into 22-ounce balls. Flatten the dough and sprinkle with cinnamon-sugar mix and raisins. Roll the dough over itself 4 to 5 times and place in a greased bread pan. Cover the top and sides with the cinnamon smear. Proof the dough for 25 to 30 minutes.
  4. Preheat the oven to 375 degrees F.
  5. Bake for 46 minutes. Remove from the pan and place on a cooling rack. Slice into thick slices.
  6. For the maple mousse: Thoroughly blend the heavy cream, powdered sugar and maple syrup in a large bowl until well mixed.
  7. For the French toast batter: Thoroughly blend the eggs, milk, heavy cream, maple syrup, rum, cinnamon and nutmeg in a large bowl until well mixed.
  8. For the Wrightsville Beach French toast: Soak the cinnamon raisin bread slices in the French toast batter until well saturated. Fry in a 350 degree F deep-fryer until golden brown, about 2 minutes (DO NOT OVER FRY).
  9. Cut the fried cinnamon raisin bread diagonally and shingle on a plate. Top with maple mousse. Sprinkle with powdered sugar and garnish with fresh berries.

Oh my word, what a great bread recipe!  I made a lot of people extremely happy this weekend!  I’m sure it’s amazing French toast, but I made it for the raisin bread.   It’s rich bread, just amazing texture.  A lot to work with.  I would use half recipe more often.  No amount of raisins in recipe, but showed on video generous amount of raisins.
