Jacqueline Kennedy Onassis’ Creme Brulee

Ingredients

  1. 3 cups heavy cream
  2. 1-inch piece vanilla bean
  3. 6 tablespoons sugar
  4. 4 egg yolks
  5. 2 eggs

Instructions

  1. In upper part of double boiler, heat 3 cups of heavy cream with the vanilla bean. In a bowl, beat 6 tablespoons of sugar with the egg yolks and eggs until light and creamy. Take out the vanilla bean, and stir the warm cream into the yolks very carefully and slowly. Return the mixture to the double boiler, over boiling water. Stir constantly until the custard coats the spoon. Then put into a glass serving dish and place it in the refrigerator to set. When ready to serve, cover the top of the custard completely with brown sugar, using 1/2 cup or more. Place the dish on a bowl of crushed ice and place custard under broiler flame until sugar melts and caramelizes. Keep watching it, for the sugar will burn. Serve immediately.

So easy and elegant. The only thing I did differently, was to pour the creme into separate dishes/ramekins instead of the one container. I find this method far superior to the water bath.

Sometimes I just use a large metal bowl over bowling water, s long as it doesn’t touch the water, it’s sometimes easier, due to the ability to whisk and not have to get into corners.

I’m surprised nobody has rated this until now. This is by far the easiest creme brulee one can ever make. It’s fast & no cooking in the oven. I have made this for the past 6-7 years & everybody always raves about it. A definite keeper!
