Ingredients
- 1 cup all purpose flour
- 1 1/2 cups water
- 3 eggs
- Salt
- Oil
Instructions
- In a bowl whisk together flour, water, eggs and a dash of salt until smooth. Let sit for 5 to 10 minutes. Rub an oiled paper towel along the inside of an 8-inch nonstick skillet. Heat skillet. Pour 1/4 cup batter onto the pan. Swirl batter around to cover surface. Cook over medium heat until firm, about 20 -30 seconds. Flip crepe with fingers or spatula. Cook for about 7 seconds on other side. Remove from pan and stack on a plate.

Excellent recipe. Quick and easy. Perfect for me as a college student looking for a quick bite with minimal ingredients. They were very yummy with sweet cream and peaches!
After reading the recipe, I have to say I see an issue right up front. You NEED FAT in the batter. Simply oiling the pan will NOT CUT IT. 1-2 TB of melted butter is called for to keep the crepe from sticking to the pan. And about that pan, invest in a steel crepe pan, DeBuyer makes one for under 30$, you season it and keep it just for crepes. You won’t be sorry. Also, the liquids should be a blend of water and milk, half and half of each. And 2 eggs, not 3.
I love this recipe. Ever since I tried this recipe my kids have begged for crepes every weekend. They don’t always look amazing but they taste great. I add a couple punches of sugar to the batter.

Easy recipe and my go to if I want to make crepes. Depending on the size of your pan it make about 8-10 crepes
