Ingredients

  1. 2 cups frozen petite peas, thawed
  2. 2 tablespoons extra-virgin olive oil
  3. 2 teaspoons fresh tarragon leaves
  4. 4 ounces cream cheese, cubed, at room temperature
  5. 1 cup grated Parmesan
  6. 1 teaspoon freshly grated lemon zest, from 1 small lemon
  7. 1 teaspoon kosher salt
  8. 4 large carrots, peeled and sliced on the bias into 3-inch “chips”

Instructions

  1. Put the peas, olive oil and tarragon in the bowl of a food processor fitted with a metal blade and pulse until finely chopped, about 30 seconds. Add the cream cheese and process until smooth, about 1 minute. Add the Parmesan, lemon zest and salt and pulse to combine. Transfer the mixture to a bowl, cover and refrigerate until ready to use. Serve with carrot chips.

I loved it!  Made it as intended and it had a lovely fresh pea flavor!  Then we made it again and this time tried something new, baked it.  Served it with crackers hot.  Sooo good!  Am looking forward to trying it as a sauce in baked pastas!  So versatile!

I made this to bring to work as a light and satisfying alternative to the junk food snacks my co-workers are always eating and trying to share. I adore it!!! This looked SO good to me when I watched the episode that I ran right out and got the ingredients to make it. When I did, I found it to be kind of a strange combination and not great tasting. I love everything in it, but all together it doesn’t seem to work that well.

I too was so excited to try this recipe – there was too much cheese which I believe covered up the “pea” taste – not sure if this was done intentionally for kids – my grand kids did not like it and they love peas – nevertheless, I like the idea of adding mixture to pasta so it doesn’t go to waste – first recipe of Giada’s that wasn’t a hit – Thanks –

e oI was really excited about this recipe and it just didn’t work for me. Its good but it just tastes like peas. A bit like fancy baby food. I took the advice of another review and added garlic and lemon juice as well as a little extra tarragon as I like the flavor. The garlic gave it a little heat but it still just didn’t tickle my taste buds. It won’t go to waste, maybe add it to some pasta but won’t try again unless other reviews find a secret and share. I did use sweet peas. Still will try the other recipes from the show, the salt looks like a great hostess gift.

I added a lil garlic and lemon juice also for our taste. But it’s still delicious without it.
