Instructions

  1. Combine 1 pound diced sushi-grade tuna, 1 cup diced cucumber and 1/4 cup chopped scallions in a bowl. Add 2 tablespoons soy sauce, 1 tablespoon toasted sesame seeds, 1 teaspoon each lemon juice, sesame oil and rice vinegar, and 1/2 teaspoon each red pepper flakes and kosher salt; toss to coat. Cover and refrigerate 30 minutes. Serve in Bibb lettuce leaves with root vegetable chips.

This is just the right dressing and main ingredients combination. Agree with adding avocado! Instead of serving on lettuce cups, I like to add some other veggies such as: sugar snap peas, julienned carrots, very thinly sliced red cabbage, strips of jicama, sliced radishes, edamame. Wasabi and pickled ginger are nice options too. This recipe has minimal instructions: while it’s simple, people without much cooking experience may make mistakes. I first combined the dressing ingredients in a small bowl and whisked them together before adding them to the tuna. This is a delicious, healthy, and satisfying recipe that you can add to.

There is something about cucumbers, tuna marinated in sesame oil and rice wine vinegar. Someone mentioned adding avocado, which I suggest as well. It adds a creamy rich addition to the tuna.
