Sticky Soy Salmon with Broccolini and Lime Rice

Ingredients

  1. 1 cup jasmine rice
  2. Zest of 1 lime
  3. 1 tablespoon vegetable oil
  4. Four 6-ounce skinless center-cut salmon fillets, patted dry
  5. 1/3 cup honey
  6. 1/3 cup soy sauce
  7. 1 tablespoon rice wine vinegar
  8. 1 teaspoon ginger, finely grated
  9. 2 cloves garlic, grated
  10. Juice of 1 lime and 1/2 lime, thinly sliced into half moons
  11. Cilantro leaves, to garnish
  12. 1 bunch broccolini, cleaned with stalks trimmed to 3 inches long

Instructions

  1. For the lime rice: Cook the rice according to the package instructions and keep warm.
  2. For the salmon: Heat a large skillet over medium-high heat. Add the vegetable oil and heat until the oil shimmers. Add the salmon flesh-side down and sear until golden brown, about 3 minutes.
  3. Meanwhile, make the glaze: Whisk together the honey, soy sauce, vinegar, ginger, garlic and lime juice in a bowl.
  4. Turn the fish over and add the soy mixture to the bottom of the pan. Bring the soy mixture to a simmer and spoon over the top of the salmon as it cooks until cook through, 5 to 7 minutes.
  5. Meanwhile, bring a pot of water with a steamer insert to the boil over high heat. Add the broccolini, cover and steam until crisp-tender, 4 to 5 minutes.
  6. Remove the fish to a plate. Add the lime slices to the skillet and simmer until the glaze is super sticky, about 3 minutes more.
  7. Add the lime zest to the rice and stir. Tip onto a platter. Arrange the broccolini on top and place the salmon, glaze and lime slices on the broccolini, then sprinkle over the cilantro.

Made this tonight, but had no lime. I used lemon instead and it was just as yummy!

I have made this recipe many times. I add 1/2 tsp red pepper flakes to the sauce. Also have substituted green beans for broccolini. Making it tonight with chicken instead of salmon! Lime is the key ingredient.

This was absolutely delicious to the whole family. I used fresh green beans instead of broccoli and added some of the sauce. YUMMY!!!! Very quick and easy and will be using that glaze recipe on lots of things!

I watched Ree Drummond make this the other day and figured I would try it. I am NOT a cook and I normally wouldn’t dream of cooking fish. But this recipe was clear and easy to follow. I prepped the sauce first so the whole process was simple. My husband (who is a cook) really enjoyed the meal and I did as well! It’s easy to make but the flavors are interesting enough to impress guests.
