Seared Spicy Tuna on Basil Parmesan Crisps With Apricot Jam

Ingredients

  1. 1-pound piece sushi grade tuna
  2. 2 tablespoons Cajun spice rub
  3. 3/4 cup grated Parmesan cheese
  4. 1/4 cup chopped fresh basil
  5. 1 tsp olive oil
  6. 1/2 cup apricot jam

Instructions

  1. Rub tuna with Cajun seasoning and set aside. In small bowl mix cheese and basil. Place tablespoons of the cheese mixture on a baking sheet lined with a silicon baking mat or wax paper sprayed with nonstick spray. Bake in a 350-degree oven for 6 minutes or until cheese is melted and golden. Set aside to cool. Heat oil in a medium pan and cook tuna 2 min per side for medium rare. Thinly slice tuna place it on top of the Parmesan crisps along with a dollop of apricot jam.

made this for a wine tasting dinner with a bunch of friends. This was easy to make, the tuna was delicious. I went to the asian market to get sushi grade tuna. The parmesan crisps were a bit oily and you had to chop of the shredded parm a bit for everything to stick together. The tuna was perfect cold and it transported easily to my dinner party.
