Salmon and Chive Tea Sandwiches

  5.0 – 1 reviews  • Smoked

A fantastic romantic dinner for two is this chicken scallopini with piccata sauce. Although veal scallopini is a well-known Italian dish, you can prepare it with any type of meat or vegetables. The secret is to use a demi-glace that matches the manner of the dish; for instance, if using deer, use a venison demi-glace.

These were excellent and also simple to make. I had never bought the chive cream cheese before and it was a little pricey but well worth it. These were gobbled up in no time. I did think they could use some crunch so I served sliced cucumber on the side. Next time I’ll just add them right on the sandwich. The only change I made is that I used rye and pumpernickel swirl bread from Pepperidgefarm because that is all the rage around here these days. This recipe is a keeper! Thanks for sharing!
