Everything Salmon Fillets and Cream Cheese Potatoes

This quick dinner version of a favorite breakfast has all the flavors of an everything bagel with lox: fillets of salmon are coated in a bagel chip-crust, scallion mashed potatoes have a cream cheese boost and a side of tomatoes and onion completes the dish.

Ingredients

  1. Nonstick cooking spray, for the baking sheet
  2. 2 pounds russet potatoes, peeled and cut into 1/2-inch chunks
  3. 8 ounces cream cheese, cubed, at room temperature
  4. 1 bunch scallions, thinly sliced
  5. Kosher salt and freshly ground black pepper
  6. 1 cup bagel chips, finely crushed
  7. 3 tablespoons everything bagel seasoning
  8. 2 tablespoons extra-virgin olive oil
  9. Four 6-ounce skin-on, center-cut salmon fillets
  10. 4 plum tomatoes, sliced into 1/4-inch-thick rounds (about 1 pound)
  11. 1/2 small red onion, thinly sliced
  12. 2 teaspoons red wine vinegar
  13. 1 tablespoon drained capers, optional

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with foil and coat with cooking spray.
  2. Add the potatoes to a medium saucepan and cover with cold water. Bring to a boil over medium heat and cook until the potatoes are fork tender, about 15 minutes. Reserve 1/2 cup of the starchy water and drain the potatoes. Return the potatoes to the pan, add the cream cheese, scallions, the reserved starchy water and 2 teaspoons salt. Mash with a potato masher or fork. 
  3. Meanwhile, mix together the bagel chips, everything bagel seasoning and 1 tablespoon oil in a small bowl. 
  4. Press the bagel chip mixture onto the top of each salmon fillet. Transfer the fillets to the prepared baking sheet, skin side-down. Bake until the salmon is cooked through and the top is golden brown, 10 to 12 minutes. 
  5. Arrange the tomato slices and onions on 4 plates and drizzle with the vinegar and remaining tablespoon of oil. Sprinkle with capers, if using, and season with salt and pepper. Divide the salmon and mashed potatoes among the plates.

I made this & just like one reviewer said “way too salty!! almost inedible. The idea is good but the final outcome really depends on the brand of everything seasoning & it’s salt content. The bagel chips were fine but after adding the amount of seasoning the recipe calls ( which is a lot) just way too salty. I ended up trashing the first topping mix & made another with just a hint of seasoning & a little panko ( ran out of chips) The potatoes were great!! Never ever used the starchy water before, always milk. I’d say it was the best mashed potatoes I’ve ever had! I will not be going back to milk! The tomatoes , onions & capers were a nice addition

This salmon was delicious!  Only thing I might do is add a bit more oil to the crunchy mixture.  Mine was very crisp and wanted to fall off the salmon.  The flavor was wonderful.

I didn’t really care for this much. I like the concept but when I made it it was too salty. Some of the other salmon recipes on here are better so I won’t make this again. It wasn’t bad, it was just okay.

I love this recipe. My favorite way of doing Salmond. I had to order the beagle spice from amazon. I did not have a Trader Joe’s close to me. Then I bought a cracker chip that had some of the same ingredients that the recipe called for. It worked out well. Will be a dish I do often!
