Brown Sugar Spiced Salmon

Ingredients

  1. 1/2 cup dark brown sugar
  2. 1 tablespoon chile powder
  3. 1 teaspoon kosher salt
  4. 1/2 teaspoon freshly ground black pepper
  5. Four 8-ounce salmon fillets

Instructions

  1. Preheat the oven to 400 degrees F. Line a baking sheet with foil.
  2. In a small bowl, mix together the brown sugar, chile powder, salt and pepper. Put the salmon on the baking sheet. Evenly distribute the sugar-spice mixture over the top of the fillets.
  3. Bake for 10 to 15 minutes, depending on thickness and desired doneness.

I have made salmon filets with the brown sugar as primary ingredient in the “Add-on” any number of times. . .It lends itself to experimenting. . .With soy sauce; lemon juice mixtures; worcestershire sauce; balsamic vinegar; oyster sauce. . .The only “additive” I would NOT recommend is a “malt beverage” (non-alcoholic) from India! The brand name I used was “Malta India”. . The results were TERRIBLE! Any concoction you attempt should be tasted FIRST before putting it on the salmon! If it seems a bit “chancy,” trust your “taste buds” ‘cuz it ain’t gonna get better than that initial taste!. . .No point in ruining a food (salmon) that costs upwards of $10-$15/lb. . .By the way, I have tried FRESH Caught West Coast salmon; and, east coast and Canadian Farmed Salmon. . .In most cases, a little bit of brown sugar turned out OK . . .My favorite is simply brown sugar; mixed with a tsp or so of melted butter; and, letting the salmon sit in the mix for 30-45 minutes. . .I have also set out 3-4 or more of some of the above add-mixtures stuff; and, let the guests “play with it;” and, tell me about the results. . .Ratings have varied from 3 to 5 stars! My simplest mixture gets 5-stars!

I’ve been meaning to post a review for this for quite awhile. Thank you Katie! Love, love, love, this recipe. Quick, easy, everything is in my pantry except the salmon. I changed your recipe up a little bit and use tajin seasoning and chili powder. We like the lime flavor. I don’t add salt with that combo, but I do put a few grinds of pepper from the pepper mill. Delicious! I always make extra because it’s also great cold on some greens or a salad the next day!

This is my favorite salmon recipe. Since I’m cooking for one, I made the rub and sealed the extra in a Ziplock. Whenever I want Salmon, the spice is ready and dinner is quick and easy. Add a spinach salad and enjoy!
