Vegetarian Meatless Meatloaf with Lentils

In an effort to find the perfect vegetarian “meatloaf,” I have been experimenting with a variety of recipes. This is a combination of many recipes with my own twist. Before baking, you can add sauce or ketchup, but I don’t.

Ingredients

  1. 2 cups vegetable broth
  2. 1 cup brown lentils, rinsed
  3. 1 cup quick-cooking oats
  4. 1 cup shredded Cheddar cheese
  5. ½ cup panko bread crumbs
  6. 2 large eggs, beaten
  7. 1 small onion, finely chopped
  8. 4 tablespoons ketchup
  9. 2 cloves garlic, crushed
  10. 1 tablespoon dried parsley
  11. 1 tablespoon vegan Worcestershire sauce (such as The Wizard’s)
  12. 1 teaspoon dried basil
  13. ½ teaspoon red pepper flakes
  14. salt and ground black pepper to taste

Instructions

  1. Combine broth and lentils in a saucepan and bring to a boil. Reduce heat and simmer until lentils are soft and broth is absorbed, 20 to 30 minutes. Drain extra broth, if necessary. Mash lentils slightly and transfer to a large mixing bowl.
  2. Preheat the oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  3. Add oats, Cheddar cheese, panko, eggs, onion, ketchup, garlic, parsley, Worcestershire sauce, basil, red pepper flakes, salt, and black pepper to the bowl with the lentils and mix well. Transfer mixture to the prepared loaf pan.
  4. Bake in the preheated oven until loaf starts to brown, 35 to 45 minutes. Let sit 10 minutes before serving. Loosen sides using a spatula before slicing.

Very tasty. My husband, a non vegetarian, said it was a keeper. I served it with a mushroom gravy. I pressure cooked the lentils because for me they always seem crunchy when cooked any other way. Thanks for the recipe.

I followed the recipe but added diced uncooked carrots and celery to the mix before putting into the loaf pan. I would imagine sauteed, diced mushrooms would also be a good addition. I served with Red Mashed Potatoes (whipped with only olive oil, the starchy potato water and chicken or veg broth) and a Mushroom Gravy.
