My daughters are both vegans. For them, I created this straightforward vegetarian Hoppin’ John recipe. If more ingredients are desired, it can serve as a basis for such additions. This dish was offered as a vegetarian option in the student dining halls after being submitted to the Harvard College Dining Services.

Ingredients
- 2 ½ cups vegetable broth
- 1 cup long grain rice
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 (15 ounce) cans black-eyed peas, rinsed and drained
- ½ teaspoon Cajun seasoning
Instructions
- Bring broth and rice to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender and liquid has been absorbed, 20 to 25 minutes.
- Heat olive oil in a pot over medium-high heat. Sauté onion in hot oil until translucent, 5 to 7 minutes. Stir cooked rice, black-eyed peas, and Cajun seasoning into onion.
- Cover the pot with a lid and cook until flavors blend, about 10 minutes.

We loved it! I still think some sweet peppers might kick it up, but it was delicious. I used pintos in place.
Good but I used it as a base and added roasted peppers, sun dried tomatoes and used a jerk chicken seasoning since I didn’t have Cajun seasoning. Celery might be a good addition? It does need some salt (it’s in my jerk chicken seasoning) because the peas are a little bland in my opinion. But otherwise, it’s good! Oh, I fried up a little bacon too, but if you’re vegetarian you obviously don’t want to do that.
Good base recipe, but I made a lot of changes. I cooked the rice in chicken broth. I added in a bell pepper (chopped), a large carrot (chopped), 2 sticks of celery (chopped), a can of diced tomatoes, and 2 cloves of garlic (pressed). For seasoning, I substituted 2 teaspoons of taco seasoning for the cajun seasoning and I added 1 teaspoon of smoked paprika and 1 bay leaf. Once it was removed from the heat, I added a squeeze of lime and mixed it in. I served it with cilantro, sour cream, and cheese. If I were to try this again, I would add in some frozen or canned corn.
I’ve never had Hoppin’ John before, so I don’t know what it usually tastes like, but thought this was excellent. I made a large batch, with a whole bag of dried beans, in the instant pot, and didn’t have vegetable broth, so here were my conversions: –Heated canola oil in instant pot, then Sauteed 1/2 large onion, 2 carrots and 3 celery stalks (chopped) with 1.5 c brown jasmine rice and 2 tsp spices in instant pot until veggies are soft. –added 1.75 c water and let it simmer a few minutes –added 1 lb dry black eyed peas and 6 cups water, 2 smashed garlic cloves and 2 bay leaves. –Pressure cooked on high for 18 minutes, natural release. –Added more seasoning (I actually used Tony’s creole seasoning) to taste when done. It was so excellent. Next time I’d love to add a leafy green veggie (as seen in the pictures) for extra texture and color. This works really well because the peas and the brown rice take approximately the same time in the pressure cooker (15 vs 20 minutes, which is why I pre-cooked the rice a little bit before adding the peas). I love a delicious vegetarian legume dish. A keeper recipe! Thanks!
It was actually good, but only after I added two cloves of garlic, carrots, and some Cajun mirepoix as well as a bay leaf to the rice.

I couldn’t find black eyes peas so I used cannellini beans. Also added carrots, peppers, celery, and ground turkey to make it a full meal hitting all the food groups. Instead of Cajun seasoning just used whatever I had on hand. Flavorful and def easy and cheap.
It seemed ok but a bit bland, so I added a can of tomatoes and upped the Cajun Spice mix to a full teaspoon. Wow! This is so easy and quick. I will make this again and again. Thank you!
Added extra veggies, plus half ring of beef kielbasa simply because I had it from a previous meal…..excellent dish! Full of flavor and easy to modify to individual tastes. Thanks for sharing!
It was a little bland. Needs more something to zip it up maybe more Cajun seasoning.
The recipe is very good! I’d suggest following the rice bag’s recipe for drier rice. I also pressure cooked black eyed peas for 1 minute on low and let it natural pressure release. I should have released it manually bc it ended up being a little mushy.
Super quick and easy – a good meal for weeknights when you’re in a hurry. When my vegetarian daughter isn’t home, I put a little cooked meat in there – whatever I have on hand. It’s good with or without meat.
Sorry, I think this recipe is bland as it is written. I had to add lots of seasonings to be able to eat it. It’s a good base though and if you like black eyed peas adding tomato helps it’s flavor.
Tasty and filling meatless casserole. I added roasted okra and poblano chiles to give it a little more umph.
It was really good and my husband who doesn’t eat blackeye peas ate two helpings.
Yep I added bay leaf while rice was cooking. When I make it again I would cut rice in half to reduce carbs

I made this with what I had on hand and changed up a bit. The only thing is, I didnt want a vegan recipe but this was closest to how I wanted to work it. I had jasmine rice so I cooked that in chicken broth. I substituted leeks for onions, added some crumbled bacon and used a bit more cajun spice mix. The family pronounced it delicious so its going in the dinner rotation.
Used as a guide only, I used smoked turkey to my broth, cooked for 2 hours, then followed recipe. End product was excellent!
